The entire Dune series, including the prequels. Yes, it may be co-written by KJA, but the prequels flesh out some of the characters that we didnt see much in the original books, like Fenring, Shaddam IV, Liet Kynes, and so on. The thing that got me to read the series was the sci-fi channel miniseries, then I bought House Atreides because I wanted to read the series in the proper order of timeline.

though I generally dislike the EU I think Showdows of the Empire is one of the best books I have read.

Anything by Phillip K Dick is generally excellent...
Dune rocks, though they get worse as they go on...
The Red Dwarf & Hitchhikers Guide books are damned good...
The 40K Novels are very good, especially the Gaunts Ghosts books, very, very good...
1984, Brave New World & Fahrenhiet 451 are all very good too...
...and Asimovs short stories are good, though IMO any book of his with more than 200 pages generally sucks eg 'Forward the Foundation, etc' - the shorter the better, IMO

I love the dune series. I actually like the later books better, I haven't really warmed to the prequels though.
The first two Red Dwarf books were great, the next two were ok, but lacked the quality that the first two had with Rob Grant and Doug Naylor working together.
As for fantasy, I have never read much fantasy, never really liked it that much, but I must get round to reading LOTR some day.

Not that they're the best by any stretch, but if you guys like Timothy Zahn his Conqueror's trilogy is pretty good.
