That happens in only some specialized areas, namely the forearms, the other parts have no shape changing abilities. (correct me if I'm wrong, I didn't watch the movie yet)
Go see the movie and you will see how versitile the endo-skeleton is. She can reverse her entire body similar to how the T-1000 did in T2 when thrown into the wall.

I picked up the second issue of the official Terminator 3 magazine today and it pretty well answered the question. Within there's a comic of the T-X being put through it's paces, first against a T-800 (or 850 possibly) then it's second opponent is a T-1002. After a brief hand to hand scuffle (with the T-1002 striking with morphed blade tendrils from multiple directions and even turning it's entire upper body into one big blade for a bit) the T-X drops it with two shots from the plasma cannon. The first reduces the T-1002 to a goopy puddle with a face in the middle and a second finishes it off.

My take on the Terminator timelines

Timeline #1. AKA TERMINTOR MOVIE 1
John Connor leads the Human resistance to victory and kicks Skynet's ascii
Skynet sends the Terminator back through time to kill John Connor's mother
Element I like to believe to make it all make sense:
It also sends a Back-up-Terminator back through time with a copy of itself in the form of a chip and software as a safety net. The Back-up-Terminator orders are to get someplace that it will not be wiped out by the nuclear holocaust of Judgement Day, and where it will be safe from detection.
(Why a Dog? One dog looks like another)
This way, if the Terminator fails, the Back-up-Terminator can warn Skynet about the rebellion, and Skynet #1 can merge with new Skynet, and know ahead of time to kill John Connor and the rebels asap.
This way, if the Terminator some how prevents Skynets creation, Skynet can use the Back-up-Terminator to get itself created later and then remerge.

I look at the end result of this being
Skynet kills the original John Connor, but creates a new one when he is sired by Kyle Reese.
Skynet's creation is accelerated via the Terminator parts. This can happen without affecting the timeline or story, as we were never given info as to win Skynet goes online in Terminator 1

Timeline #2 AKA Start of Terminator 2
Sara turns John into the man needed to defeat Skynet
Skynet #1 merges with the new Skynet. Possiblility of reinacting the events of Teriminator 1 to keep the timeline intact. It also sends the T-1000 to kill John as a boy, along with a Backup Terminator of the new improved Skynet. However, like before, the new John Connor kicks Skynet's Ascii (perhaps it's just incompetant) and sends a T-800 model 101 back to protect himself. Skynet is using the same models and DNA as before (why reinvent the wheel?)

This creates….

Timeline #3 Terminator 2, Judgement Day
However, at the end of Terminator 2, Skynet's creation is merely delayed. Skynet, in the backup terminator, realises this, and since the Backup Terminator looks nothing like the 101 (it's just common sense in case the Backup is discovered), gets to work on re-creating itself.

This Creates…..

Timeline #4:
In this, the Terminatrix is created, and Skynet has spent all it's time upgrading itself to the point of not needing to be rebuilt as a computer, but instead, it can 'infect' any computer system
The terminatrix is sent back, and probably a backup terminator or another back up plan….

Resulting in

Timeline #5
Terminator 3, Rise of the Machines



In my interpration of this, the original skynet survives and keeps upgrading itself and trying to refine the timeline until it meets Skynet's needs. i.e It wins the war post Judgement Day.

Skynet is making it's own fate. John Connor just keeps happening to stop it.

Eventually, I could see like, in 5 - 10 more loops, Skynet deciding 1 terminator is not going to do it, and it's powerful enough to not need human assistance to recreate itself, sending 20+ Terminators back to kill John Connor and his friends, and then causes Judgement Day. Letting the guy survive beyond that is dangerous.

Or better yet.

It just waits for John to crook, learning new tech as it comes up, and continuingly upgrading itself, and eventually jumps back.

Gotta love time travel and the ability to copy and paste yourself via a neural network..

Not that I would do that myself.. honest....
