How do you rationalize "energy beings"?

How do you rationalize "energy beings"?
It has been established that a purely photonic being would always travel at the speed of light; therefore it would never slow down or stop to converse with any mere mortals. So how do you rationalize what APPEARS to be a being of light?
1> A being of luminous gas or plasma?
2> A being of elaborately structured energy fields? (If the primitive mortals already have energy shields, then it is not a fair stretch to imagine a more advanced species constructed of them).
3> A being that could restructure its body on a sub-atomic or even quark scale? (There are similar ideas in www.orionsarm.com)
4> A being that is actually a rare non-random portion of the ZPE field, or whatever the fabric of space-time actually is? (This may raise new problems, of course ... but it is close to what Arthur C. Clarke described in the novelization of 2001, regarding the fate of the Monolith Makers).
5> A highly permeable, semi-crystalline being that stores its energy within its body? (This is apparently what the Vorlons are supposed to be).
6> A cloud of luminous nanotech utility fog? (Similar to 1>, and raises the problems of nanotech. But if you already have force fields and FTL travel in a scenario ... well ...)
7> An extradimensional "solid" being that can only insert a 3D slice of itself into our plane of existence? (The 3D part would be an infinitesimal portion of the being, and therefore massless - I think ).
Which one of these is the most plausible?

I don't. 90% of the time it's just stupid writing. The other 10% of the time it's not an <cough, gag, choke> 'energy being' but rather something with physical form that uses elements of the universe's tech base (long range visual projectors, telepathy, etc, etc) to glow pointlessly.
