With the Pi thing, I would think that they could have written down "thirty-one cubits and a bit) or something. Just, more than one significant figure.

Not really. Ignorance doesn't equal idiocy. After all, suppose you were an ancient man looking up at the sky. What the bloody hell would lead you to assume that the stars were really gigantic balls of hydrogen undergoing nuclear fusion at mind-boggling distances away? No, like everyone else, you'd assume that the stars were tiny shining things that were stuck to the big, bluish-black thing up in the heavens.
When was the OT written down? I assumed it was much before the time of the Greeks. However, you are correct that their value of pi was better.
