No, I believe a highly superstitious and impressionable group can jump to any conclusion.
And as to 500 people a year being killed by this thing, what's the Mexican government's stance on this thing? Do they investigate on the premise of the goat-sucker being responsible? Parts of Mexico are virtualy lawless, people get murdered and go missing all the time. A Mexican friend of mine had his sister in law disappear. He didn't blame El Cupacabra.
The Mexican immagrants I know laugh when they talk about it, mostly.
Superstition lies at the base of this thing, just like alien abductions and cattle mutilations. And I have no doubt that hoaxes ARE carried out to perpetrate the legend, just like alien abductions and cattle mutilations.

Then how do you explain how these attack usually only leave a pair of holes on the outside of the carcasses of the animals - but the dead animals' internal organs often are mashed to bloody pulp??

I'm not sure. However, some people believe that various governments in Latin America are withholding informations about El Chupacabra. I don't believe this - the governments probably don't believe this, and it seems a little foolish to resort to paranoia.

Really??? So - explain how it is possible to mash an animal's internal organs to bloody pulp and only leave two very fine marks at the neck. And explain why so many farmers yearly kill the entirety of their livestock just to keep some old legend alive.

Evidence??? Well, there's the afore-posted pictures which are supposed to be of a dead Chupacabra, but it looks more like a dead dog. But it's up to whether you consider the bizarrely drained animal corpses enough evidence.
