I'm about to buy a new fridge, and I'm considering rooting around in the old one and rewriting it to become a curing chamber for sausage and such. I've been doing some Google research on the subject, and found that the biggest problem seems to be maintaining correct humidity.
Anybody have any kind of experience with a homebrew project of this like?

None but its sounds fun. Fridges are naturally dry cos all the moisture gets frozen the drained off the back wall due to compressor cycles. What humidity are you going for?
