Can hot sauce go bad?

I know there are some things like honey that simply can't go bad. Is hot sauce one of them? I figure it might have too much stuff in it to let stuff grow. I have before me a previously unopened bottle of hot sauce I got a few months back, and its a clear/white on top and a deep red down below. I can't tell if it settled or went funky.

Did you try shaking it?

Yes, it can. It's made out of jalapeƱos, which are perishable. When it goes bad, I dunno. But it's a long time.

As for it being unopened for just a few months, I should think it's still good, and it just settled.

Shake, taste, if it tastes wierd (i.e. bitter) or if the liquid is milky, then it's bad.

I thought honey was the only thing (well, other than water, I guess, which just gets kind of stale) that doesn't go bad ever...no?

If it's un-opened, it shouldn't have gone bad. Depends on the vinegar content, though.

With all things food related, the following are words to live by:

When in doubt, throw it out! :D

Indeed. Is it really worth the risk of getting sick over a bottle of hot sauce that costed you what? $10 at most?

Mustard lasts for well over a year at least.

Twinkies will last for thousands of years.

And if your milk spoils, dont think of it as wasted milk, think of it as free cheese!

What about liquor with a high level of alcohol.

It doesn't *spoil* but it does ferment to the point where it's no good as alcohol anymore.. Unless you *really* want Everclear or Absinthe..

I've personally never had a bottle of hot sauce settle before so if it was me I'd be leary of tasting it. Maybe the bottle wasn't sealed properly to begin with.

Any food will go "bad" eventually, there are microbes out there that eat heavy metal, don't think your hot sauce will be too spicy for them. ;)

A good rule of thumb is if the sauce screams when you pour it onto your hot food, it's likely beyond consumption and needs to be captured and fried with a flamethrower.
