Yes, and no. With modern high quality stainless steel such as S30V it's perfectly fine for blades up to about a foot & a half long. Any longer than that and you'll have to go with a non-stainless steel, as a general rule. The main problem is it's a complete bitch & a half to do a differencial heat-treat (hard edge, soft spine) on stainless steel. Might be half decent, might not be. You can ocassionally pick up good bargains. With the wrong heat treatment, you can make lots of alloys brittle.
