Why not just adopt the U.S. Constitution? It's worked for a few hundred years....

Not long enough, the EU constitution is actually a convoluted scheme to see every tree on the planet cut down and the US constitution is far too short for that.

That might be because the preamble is not in there yet.

Those 30 pages are the alterations not the actual constitution.

There is only one alteration to the preamble in there and it isn't anything to do with religion therefore the constitution will just contain the reference already there ("Drawing inspiration from the cultural, religious and humanist inheritance of Europe").
