I just finished reading "Dark Encounters" a collection of old Marvel Star Wars comics.

Issue 38 is the best imho, and It featured an interesting organic ship.

Are there other publications in which this ship and its isane pilot are mentioned?

Specifically, no. But the ship bears an uncanny resemblance to the type of ship used by the vong shapers in Jedi Eclipse.

The ship used non organic technology too, unlike the Vong.
The light sabre wielding droid for example.

The pilot said he was the last survior of a war.
Maybe the ship and the pilot are from a race which was defeated by the Vong.

Another interesting thing is that it used anti-matter pods to dispatche some Imperials.
