I know its not precise, but I'd think the A-wing would be something just a tad faster than the F-104. I'd almost say F-22, but that'd put it above the E-wing.
As for B-wing, I'd put the A-10 as the closest analogue, though the Warthog is closer to the K-wing.

I always thought that Star Wars fighters were analogous to World War II fighters and jet fighters from the immediate postwar era.

The Y-Wing is the one-dimensional, slow lumbering bomber with a defensive turret.
The B-Wing is a strike aircraft, its quick and can hold its own against other fighters while carrying a wallop for attack.
The B-Wing is not the B-25.

B-wing= Typhoon or Mosquito. Relatively heavily armoured for a fighter craft, heavy armamanent of cannon and rockets, deadly to fighters, ships and tanks.

Z-95: Curtiss Hawk 75. The old war dog that kept on soldiering far in to obsolescence, know for being robust and reliable, much loved by it's pilot's. Saw much service in less in less wealthy parts of the world/galaxy.
X-Wing: Curtiss P-40 Warhawk. Successor to the Hawk, tough, hard-hitting plane known for being robust and reliable, just like its older brother. Did more then it's fair share of the fighting early in the conflict.
Y-Wing: Hawker Hurricane. Less capable then newer fighters but provided invaluable service and still earned it's keep as a fighter/bomber later in life.
B-Wing: Hawker Typhoon/Tempest. Never really lived out to it's expectations, but served with honour in spite of that.
A-Wing: Vought F4U Corsair. Finicky piece of equipment often kept in service with impromptu repairs, hated passionately by ground crews, but lethal in the air.
I though of camparing Z-95 and X-Wing to Wildcat and Hellcat, but Z-95 never saw much combat with the Rebellion, where as the Wildcat was the most important carrier fighter the US had early in the war, so I went with the Hawk/Warhawk line instead. Besides Hawk and Warhawk are my two favourite US fighters of the WW2 era.

Here's my take at it:
Z-95: Hawk 75 (see Sir Sirius for reasons)
X-Wing: P-40 Warhawk (ditto)
Y-Wing: Either P-38 Lightning (center gun, two-engine layout) or P-61 Black Widow (center guns, two engines, dorsal turret)
A-Wing: P-51 Mustang. Quick, usually agile, but doesn't carry much besides the guns.
B-Wing: P-47 Thunderbolt. Rugged, guns everywhere, and about the largest fighter one can imagine (at the time)
TIE Fighter: Bf 109. They're everywhere, and they're decent, though outmatched by late aircraft.
TIE Bomber: Me 110 Zerstorer. Slow, somewhat rugged, more an attack vehicle than anything else.

Z-95 - I-16 - both are obsolete
X-Wing - P-38 - both are good multirole crafts
Y-Wing - P-39 - not bad if you know how to fly it
B-Wing - IL2 or P-47 - tough - lots of guns and warheads
A-Wing - Tempest - both are fast
E-Wing - F8F Bearcat - great fighter - arrived to late
K-Wing B-26 - both are terriffing ground pounders
Tie-Fighter - Zero excellent dog fighter - outclassed by more advanced crafts
Tie-Interceptor - Bf109 good but not so durable fighters
Tie-Bomber - Ju87 both are good bomber and both are dead meat without air/space supperiority
Tie-Advanded - TA-152 great fighters outclasses most enemy fighters
Missileboat - H0229 - only prototype available
Gunboat - He219 - nasty heavy fighters
Tie-Defender - Do335 - only a few of them were finished before the war end
