Most of my cooking skills involve looking at the directions on the box, so I'll mostly be sitting on the sidelines of this thread.

Me too. I dont know how to cook diddly. Im suffering because of it now that I live by myself.

Ive gotten good at making potstickers from Costco. I boil them, then I brown them in a pan. Mixing soy sauce and chili sauce ( the red one with the rooster) is pretty good for dipping the potstickers in.

Coq au Vin
  • 1 chicken, cut up. 1/4 pound bacon, cut in 1/8 in. strips. 1 pound button mushrooms, cut in quarters lengthwise. 1 pound pearl onions, peeled. 3 cups red wine. 3 cups beef stock. 2 cloves garlic, minced. Rosemary, thyme, or other herbs of choice to taste. Salt and pepper to taste. 1 shot of brandy. 1 tbs flour and 1 tbs butter, mixed together.
In a large skillet, crisp bacon and resrve grease in pan. Remove the bacon and add chicken, skin side down. Brown chicken on both sides in bacon fat over medium low heat untill browned and a little crispy. Carefully pour off excess fat from skillet, add brandy, and VERY carefully light with match to flambe' off the alchohol. After flames subside, turn heat to high, and add wine and stock. Bring to a slow boil, return bacon, and reduce heat. Add herbs and garlic and simmer for one hour. In a seperate pan, place onions with enough water to cover and bring to boil. Onions will be done when a fork passes through easily, but do not overcook. Keep onions warm, on the side. In a seperate large skillet, bring a couple tbs of butter to a smoking hot stage, and add mushrooms. Do not overload pan, as mushrooms will extrude moisture and boil, not brown. If you have too, do mushrooms in stages to achieve desired results. Remove chicken from wine-stock mixture, and turn up heat to bring to a rolling boil, and add flour-butter mixture and stir constantly until sauce is thickened. Serve chicken with onions and mushrooms as garnish on top, and cover all liberally with sauce.

Large amounts of fat and sugar don't make me sick, and only 1 in 10,000 eggs has enough selmenala to make you sick.

Dorm Stew

1 Crock Pot (Really you should buy one, lay some towels under it, to deal with the overflow but you don't need to know how to cook to use one)

1/2 pound roast meat (Trust me it's cheap, and it's not hard ot cut)
or
1/2 pound of Chicken (harder to debone then roast & more expensive, or for total ease just cut up some boneless breast fillets)
2 cans of veggies (One should be tomatoes)
2 potatoes Just cut them up

fill crock pot with water.

place towels under crock pot!!!
plug the sucker in
go to class
come home
when hungry eat
(It takes about the crock is great for cooking, cause if you just leave it to it's own devices it will do all the work for you.)

Gren Chile Chicken Enchiladas (Serves 16...or 8 with leftovers)

6-8 Chicken Breasts
32 Corn Tortillas
1 Family Size Can Campbell's Cream of Mushroom Soup
1 Medium White Onion
1/4-1/3 cup Green Chile (REAL green chile if you can find it, if not, then Old El Paso ina can'll do....medium)
1 lb. Colby Jack Cheese (or, 1/2 lb. Monterey Jack, 1/2 lb. Cheddar)
Salt
Pepper
Tomatoes, Lettuce (optional)

Step 1: Boil Chicken Breasts until done. Bone, skin. Cube, and set aside.

Variation 1:

Step 2: While Chicken is boiling, tear into bite-size chunks. Put in a large bowl. Set aside.

Step 3: Chop onion somewhere between finely and coarsely...into small chunks. Set aside.

Step 4: Grate the 1 lb. of cheese. Set aside. (Yes, we do a lot of setting aside.)

Step 5: Open can of soup, and mix into tortillas. Throw in onion, chicken and green chile, and salt and pepper to taste. Stir in 1/2 of the cheese, as well.

Step 6: Put into a square or rectangular glass pan. Top with remining cheese. Cover. Microwave on high for 20 mins, or bake on 375 degrees for 30 mins (more or less....only baked em once). Serve. For a colorful variance, add lettuce and cubed tomatoes.

Variation 2: (Note: this variation may require more tortillas)

Step 2: While chicken is boiling, cut up onions, grate cheese (as stated in Variation 1, Steps 3 and 4). Put into medium bowl.

Step 3: Open can of soup, mix in. Add salt and pepper to taste. Add 1/2 cheese, green chile. Put into two bowls, a medium and a small one.

Step 4: Take one corn tortilla, lay flat. Spread mix onto tortilla. Roll, set into a rectangular glass or metal pan. When having filled one layer, spread mix over top, layer with cheese. Or when you run out of tortillas, whichever comes first.

Step 5: Cover with aluminum foil, bake at 375 degrees for 30 mins. Serve with lettuce and tomat for a colorful appeal.

Scooby Snacks

2 cups flour
2 eggs
1 cup quaker dry oatmeal
1 tbl vanilla
1/2 cup cocoa
1/2 cup sugar
1/4 pound (1 stick) butter
1 tsp walnut extract
1 oz. of finely ground cannabis

Preheat oven to 350 degrees. Combine all ingredients in a large mixing bowl. If there is not enough liquid to mix all ingredients after 5 minutes of stirring, add a tiny amount of milk to aid in mixing of remaining ingredients. Taste batter before cooking and adjust amount of sugar to your liking. Place on a lightly greased cookie sheet and bake for 8 to 12 minutes, depending on how large you made your cookies. Can be cooked for a shorter time for chewier cookies, or a longer time for drier, crisp cookies.

Carpaccio:

Get some thin strips of raw, uncooked meat (I personally prefer horsemeat) arranged in a broad plate.
Put thin scales of parmesan cheese on the top to cover the meat.
Pour a little bit of oil over the scales and in top of all some drops of lemon juice.

Quantities vary on how hungry are you.

Not sure what to call this

Lime juice
shrimp
Carribean Spices (You can find these in the spice section of the Grocery store)

Shell the raw shrimp blace them into a plastic or glass container.
Generously shake the caribean fish/poultry spices
cover the shrimp in lime juice

refridgerate overnight.

eat

(Just so you know the acid in the Lime juice, "cooks" the shrimp
addictive

1. shot of Vodka
2. cream soda
3. Kahlua

shot of Vodka in a glass with ice. Add Cream soda till almost full, it shook take most of the soda. Add Kahlua until a light brown color and to taste.

It's good though can be a bit sweet depending on the amount of Kahlua, though i usually put in more than one shot.
