Luke's from Return of the Jedi. Not only was it green, my favourite color, it had the shade tree mechanic feel to it. Qui Gon's is nice too, but Luke's edges it out. It just looks so much different.

I liked Anakin's/Luke's lightsaber from ROTS, ANH and ESB. I like the colour blue, and the hilt itself is a metallic colour as well as being an odd shape. A few of the sabers look very similar to each other, not the same but similiar. Darth Maul's, Count Dooku's, and Anakin's have a distinctive look to them that I think stands out. I also liked the symbology of Obi-wan handing Luke his father's weapon. It had a very mythic feel to it, while Maul's and Dooku's simply looked stylish.

They remade Vader's sabre for ESB because all the Vader prop hilts from ANH had been either stolen or lost. So they took one of the Anakin saber props and refurbished it as Vader's, hense the minor differences.

They really need to have a lightsabre hilt feature in KOTOR 2, so you can design your own. I think Luke's RotJ sabre is the best looking. And it's the only one you really get to see a close-up of in the movies too.
I also like Obi-Wan's ANH sabre, probable because it looks mostly the same. I heard they built it out of an English WWII hand grenade

Right now my character is a Darth Maul'sy guy, but most of my other games I am a single saber person. I don't like to powergame and not many Jedi really would have the skill to wield two. Between the ANH, TESB, and RotJ ones, I don't know which Vader saber is my favorite. They're all good.
