The funny thing is that, as the DVD set's documentary shows, Peter Mayhew actually was given dialogue to say on set before he was overdubbed in post-production. In the original footage clip we clearly hear Chewie say "The old man's mad." in a rather soft voice.
So I'd venture that he says something like "I'm not going down there, it stinks!"

I honestly doubt there was any sewage or such in there, firstly considering that it was a garbage chute and the group was sent to the metals and stuff section.

I was always confused on the "water" level in the trash compactor
one minute there standing up to their ankles the next Luke is taken under and you cant even see bubbles coming up so hes pretty far down than he starts bobbing when the Dianoga releses him for a second so he can say "shoot it, .....anywhere". All the While the other kids in the compactor are still standing in water to their ankles

Well for Chewie and Leia that can be the case, clearly they are on a mound of garbage but Han was standing right next to Luke when Luke gets pulled under and starts bobbing up and down. Han grabs Luke when it lets him go the first time so hes close enough to have a stable hold.
