But definitely a single phaser beam.
Of course, while the multiple beams are killing or stunning him, his fellow Jedi have gotten within lightsaber range of the Feddies, slicing their phasers up into little pieces.

almost certainly not more than one continuous beam, with just the saber.
However, don't forget that Darth Vader stopped multiple blaster bolts from Han's DL-44 (not a small gun) with his hand in TESB. Granted, Vader was extremely powerful, and probably not all jedi could do that, but it's still something that can't be ignored. A sufficently powerful jedi may very well be able to take a full-on shot by either blaster or phaser, and remain unharmed.

For number of continuous beams a lightsabre can deflect, the max against different beam from different angles should actually be two, not just one (picture the lightsabre as a line connecting two dots). And if the beams were aimmed at the same place, then a lot more.
