Because, an illusion, by definition, is optical, and can not be felt. Ash reacted visibly to the sudden change of pressure under his foot.
Keep in mind that those "illusions" of Adult and Preteen Molly were battling Brock and Misty in Pokemon Battles. Meaning she was using "Illusionary" Pokemon. And these "Illusions" were beating the asses of Brock and Misty's Pokemon.
And let's not forget the "Grand Illusion" of Entei, who ran outside the present Sphere of Invluence of the Unoun's effect, brainwashed Delia Ketchum, carried her back to the house, and later engaged in the climatic battle against Charizard.
You're also forgetting that pokemon have limited power reserves (PP from the game). Further, even a machamp can't move a boulder unless it powers up with a strength attack (again, from the game) Of course, we don't know the SIZE of the boulder. It looked pretty big in my screen (about 1/8-1/4 [been awhile] the size of a one room family home...), but hardly a mountain. Trust me, I've seen mountains. They're loads bigger.

In addition, IIRC, the TV ep where ash fights the mankey (at the time hella powerful, IIRC), the mankey goes nuts on him, yet doesn't have the power to kill him. Surely if they were that powerful the mankey could do more damage than that?
You mean like the time after he evolved, and was chasing Ash? Primeape was shattering boulders in his path. Mind you, he didn't hit them. He
ran through them like they weren't there.
Also: do you have any proof as to pikachu's power?

After this Pikachu kinda goes on an orgy of Team Rocket destruction, as almost every episode, he's destroying their vehicles and/or blasting TR over the horizon.
After all, we never see it eat much, which places a cap on power from Conservation of E (or else it's magic and Sir Nitram's arguement applies). Even given that, as far as I can recall (and granted, this is only based on the entire first season in america of the show [but again, been awhile], but not the recent stuff or the comic.), that pikachu didn't do that much damage with it's shock.
Actually, we rarely see Pikachu or most of the Pokemon eat at all.
Also...earlier in this post, you mentioned a diglet beating a AT-AT by undermining? By having the legs dug out from under it? Can they dig a 6ft deep hole the size of a snowspeeder in under 10 seconds? 'cause thats the rate of digging you say they have (that would be a little over ankle height, I believe, based on the understanding that AT-AT's are 40 ft tall, and one footpad covered a snowspeeder...)

Can you show eveidence they can take salvo's from the battleship Iowa? (IIRC, that's the power of AT-AT cannons, though someone who's read the vs. portion of this site, or Dr. Saxton's recently feel free to correct me). Hell, for that matter, can they do enough damage to penetrate something that needs a small nuclear weapon (aka proton torpedo) to penetrate? Cause if they can, I wonder about ash's sanity fighting these things....
If you want to go by direct energy transfer, Hyper Beam, Thunder, Aeroblast(Of course, that last one requires the use of a ringer(Lugia))
However, with hard targets, I prefer to use more indirect methods. Ice Beam and Blizzard to freeze vital components, Psychic Pokemon and Boarding attacks to directly attack the crew, or Surf/Whirlwind/Twister/Hydro Pump to sink the ships.
