how would the have Empire fought the battle from First Contact as both sides?

Attacking? Bah! By the time Picard rode to the rescue, Earth would already be annexed by the Empire, and a Moff would be in Paris. That Feddie fleet got practically owned by the cube (especially those pissy-ass Steamrunners, which blew up left and right). It would be a bug on a Star Destroyer's windshield, to use an analogy, if that admiral was utterly stupid enough to take the Imperials on.
As for defending, what SirNitram said. A Borg cube would be ripped to shreds by a Star Destroyer, and no amount of adapting in the world can shrug off a multi-teraton bombardment.

Right off the bat I would destroy Utopia platnitia (sp) and then proceed to destroy all orbital facities and surrounding ships. After rendering Antartica a giant crater, I would offer the terms for surrender. If the feds refuse, I will show them what Earth is like after all the oceans are boiled away.

And Imperial commander would have let Enterprise-E come to the battle ASAP and used Pichards knowledge of the Borg as a tactical advantage.
Also, Imperial Commanders are generally rutheless sons of bitches, and would have ordered the use of stuff like chemical and biological agents on the Borg if there was a chance they could have done any good, kidnapping Borg to try to hack into the hivemind.
Also, tossing Multiple Asteroids at a Borg cube would keep it's weapons busy.
Plus, if the Borg made it to earth and starts assimilating it, an Imperial Commander would order the Earth destroyed just to spite the Borg

Engage the fleet, take out 40 or so ships, then warp out and regenerate back to full, and then come back in and take out more.

Easier to build on whats there than have to start from scratch.
