Changing the Jedi Temple Message

In ROTS they make it a rather important point that ObiWan and Yoda change the automated message at the temple so that it warns any remaining Jedi not to return.

One can assume that the order explains that the Clone Troopers will kill them on site and that the Republic is now being controlled by a Sith Lord.

Now one thing that ObiWan says in ANH is that Darth Vader hunted down and killed the last of the Jedi. I doubt that he meant the younglings at the Temple since he did not have to hunt down student who are right there.

So can we assume that Vader spends the 19 years between ROTS and ANH travelling the galaxy as Palpatines primary assasin exterminating (sucessfully I might add) all remaining Jedi besides Yoda and ObiWan who may have gone into hiding?

This would also explain why so few people respected of feared him in ANH. Only Tarkin really knew how powerful Vader was. The rest of the council on the Death Star seemed to care less and one (name eludes me) almost lost his life for insulting Vader.

Some of the surviving Jedi defect and become Dark Jedi Inquisitors who also hunt down the survivors, some, like Qu Rahn from Jedi Knight actually survive past Endor.

Speaking of Jedi Knight, wasn't Jerec originally a Jedi Master?

I wouldn't be surprised. Jerec was at least a Jedi Knight, who was incommunicado on the outer rim during the Clone Wars, searching for lost relics...

"The blind Jedi Knight Jerec was one of a handful of Jedi located and turned to the dark side by High Inquisitor Tremayne. Jerec had been part of a small task force of Jedi charged by the Jedi Council with recovering lost artifacts, and was stunned to discover on his return to the Republic that in his absence it had become an Empire - and Jedi were being hunted down like animals. He fled back to the Unknown Regions, but to no avail; Tremayne followed his trail, captured him and his few companions, and turned Jerec to the dark side.
Jerec immediately offered his services to the Emperor, explaining that he knew of a handful of other Jedi students who were on long-range missions and knew nothing of the fall of the Jedi Order. Jerec sought them out and turned them to the dark side, then with their aid gathered a few more Force-users, until finally Jerec had a cadre of six Dark Jedi under his command.
The Emperor charged Jerec with a task similar to the one the Jedi Council had assigned him: located artifacts of the Jedi - and the Sith - and bring them to Imperial Center. Jerec and his Dark Jedi pursued the task with fanatical devotion, but when the Emperor died at the Battle of Endor, Jerec decided to apply his work toward expanding his own power. He researched the existence of the legendary Valley of the Jedi, which he believed to be the repository of vast power, just waiting to be claimed by someone brave enough to unlock it and strong enough to control it.
Jerec learned that a Jedi named Qu Rahn was also seeking the Valley of the Jedi, and that Qu Rahn had learned which planet it was on from a Rebel named Morgan Katarn. Jerec slew Rahn and Katarn and eventurally duscivered the location of the Valley of the Jedi on Ruusan. Pursued by Katarn's vengeful son, Kyle Katarn, Jerec and his Dark Jedi hurried to Ruusan. Jerec's followers held off Katarn long enough for Jerec to access the Valley's secrets and gain phenomenal Force powers. But even with his increased might, Jerec was unable to defeat Kyle or to prevent him from freeing the Valley's trapped Jedi Spirits."

Jerec was a Jedi Master who specialized in archeology and went on expeditions to find and catalog relics of ancient Force users and sects. As a result he was an incredibly valuable convert for Tremayne and Palpatine, because his knowledge or possession of lost or ancient Jedi or Sith relics and techniques was second to none. Moreover, he also knew the whereabouts of other Jedi expeditions, and hunted them down accordingly in his new job as Imperial inquisitor. He extended his archeological searches for Palpatine's sake, finding more Sith relics - this is why Jerec was very nearly a Sith; he found so much antiquity and information about the Sith he knew a lot of their secrets - and eventually searching for the Valley of the Jedi.
