-Bucky O'Hare for the NES. That shit was tight, to dust off an old chestnut.
-Rock & Roll Racing, Cybernator, and Metal Warriors for the SNES.
-Macross VFX-2 for PlayStation. A lot of people complained about the fact that in the 'flight-only' levels, you didn't really see the ground moving beneath you. Know what I call someone who's watching the ground in a "flight-sim"? Dogmeat, that's what. There's nothing quite as awesome as looping and twisting between a whole fuckton of missiles, then going to Battroid and unloading everything you've got into some poor sap.
-Katamari Damacy for PS2. Go. Play it. Now.

Dude, wtf and holy crap, the greatest lost gem strategy of PS2, Ring of Red.
A turn-based, hex-board based strategy game. The center piece of the game were AFW's or armored fighting walkers (yes, HAB, showtrial).
Combat was time consuming (and combat was slow) and the AI wasn't challenging enough in once you got the game but it was just fun. The story was great, the tactics and strategies involving enough and it had a great soundtrack.

Battlezone (for PC)
It had awesome graphics for its time and blended action and RTS elements really nicely. Nothing like a good cold war confrontation betweens the yanks and the reds... in space. Later on the devs upgraded the graphics in a patch that made it look even more stunning.

Lots of my choices have already been mentioned such as Planescape Torment, Longest Journey, Bioforge and KKND.
Also I would like to add Archimedean Dynasty (a submarine shooter thing), Spacequest, Kingsquest, and infact most of the old point and clicks such as The Dig and Leisure Suit Larry (I mean the originals and not that steaming pile of tripe that is the new one).

Freespace 2, Independence War 2: Edge of Chaos (particularly funny to play starting the Campaign with the Warlock from B5 ) (never played the first though ), Fallout 1&2 was deeply appreciated by the local reviewers in my country though not by the players (their loss ), and Road Rash. That's my fav "race" game I still play it nowadays...

I second the EU II mention. Although I think it's starting to develop a loyal following here....the people I know who have played it absolutely love it.
I also loved Shadow President - basically, you got to be the President of the United States and you ran American foreign policy. You could do things like grant economic aid, exchange diplomatic relations, launch coup de tats, all sorts of cool stuff. For a political game that came out in the mid-90's, its depth was pretty solid.

I second Independence war 2. I loved the full 3D physics. That and Tachyon ruled. Go Bruce Campbell. I loved Red Faction, for the ability to destroy most of the level. Turn that into multiplayer, and you had some real fun.

Was that game really considered "unsung and underappreciated"? I remember it being the big deal with the N64 at the time, that this was THE big game. But who knows, all I remember is that that game was fucking fantastic. Definately need to go out and rent it again.
