We have civilians aboard US Naval ships, infact its common. But families... No, its a weapon of war and I don't see any places for Daycares or Disneylands on the DS blueprints.

A ship, then, could definitely contain a free market economy run by off-duty men, is what I'm hearing.

For long-term voyages, though, would it be practical to, like CC suggested, rope off a few thousand cubic kilometers of interior volume for families?

No, absolutely not. Never. When the shit hits the fans, do you want your damage control engineers to worry about if their families' okay? Do you want that unnecessary supply usage?

The Deathstar is doubly impractical since it's run primarily by clones anyway. And it's about a day away from any port in the Galaxy.

Clones, that was never mentioned, unless you are assuming that Stormtroopers are clones (which they aren't, at least not by the time of the Death Star). As for the "troop rotation" issue, they are probably going to be rotating crews on and off the Death Star frequently anyways for morale reasons.
