I don't mind the security uniform too much, except for the whole "WE MUST HAVE ASYMETRY!" thing that all of them suffer from. OKay, and that girddle thingy ... and the badge strap.
But what's the deal with the fat engineer? Or the slightly chunky conn guy? Why do they both look like dorks? And why give your medic a plunging neckline? I mean, other than to increase the patients pleasure while they die at your incompetent hands.

I think that the engineer is about normal weight for a Tellarite. I don't recall ever seeing any that were thin by human standards.

Not digging the new uniforms. They were on the right track with the late-DS9/First Contact ones, but now they're going back to that whole skin-tight asymmetrical crap from TNG. Like a couple of people have posted, they look stereotypical impractical sci-fi.
It's refreshing to see non-human crew members, though.

The uniforms are probably subject to change, the developers have had significant interaction with their official community and the largest fan community (STOnet) and take into account feedback and suggestions on certain issues, like these.
As for the phaser, that was brought up in some feedback threads and the art director left a post saying that right now the phaser is just 'artistic license' which the concept artist put in to give the security officer something to hold, so that's not necessarily what they will be like.

What you're seeing in the motion test is in NO WAY representative of specific functionality or information. The motion test is a collection of design elements and possible information access types for us to look at.
Actual HUDs and consoles will be much more focused, purposeful and direct.
