To me, the Defiant is more a symbol than appropriate 'wank' material (the GCS having been the most powerful ship of its time other than the infamous D'deridex-class warbirds).
Part of its hype comes from its nature -- by its stripped-down-to-the-bone appearance, lack of amenities and its explicitness about its warfighting nature (unlike the GCS), it brought the "rise of militarism in the Federation" closer than the Feds may have been comfortable with (though of course the DS9 crew was inexplicably untroubled by that, yet so by Section 31).

That's more of lazyness from the Star Trek team. Of course the Defiant only survived by the skin of its teeth in first contact. It was so hammered that they had to beam the crew off. It was considered repairable but out of the fight.
