I don't watch much anime and I buy even less soundtracks but from the little I've seen, I found the opening song from Elfen Lied very good. Lilium, it's apparently called. Very nice.

Never heard that story before, though I know how it is used in Japan (as a derogatory comment), but if someone thinks of me that way, and sees me like that, then they can go to hell for all I care. (Most of my friends are Otaku anyway, and I make it a point to inform my other friends.)

Far too many to count but I suppose the top ones are

Vocal:

Cowboy Bebop - Tank!, but as Spanky noted, the only lines are at the beginning so I'll go for "Green Bird" in Ballad of Fallen Angels. The "Una Puma" (?) dance song from Dominion Tank Police was cute (have to have the visuals to go with it though).

Non-Vocal:
Cowboy Bebop - UNK accompanyment to Jupiter Jazz (2) episode. I also enjoyed Big O's first season stuff too. The soundtrack to Robot Carnival was pretty good, mostly instrumental that went with each vigenette.

Ooh, perfect timing to stumble here -- listening to anime music.

Vocals (just some I like, no real order just trying to get 3 different styles that are all great songs)

1) Heart of Sword -- Rurouni Kenshin
2) Hiru no Tsuki -- Outlaw Star - Hiru no Tsuki
3) Wo Qui Non Coin - Cowboy Bebop (OST 3)

Instrumental

My absolute favorite anime song is Duo / Deathscythe's theme from Gundamn Wing. Great blend of electric guitars, trumpets, strings, and a drumset. All the music in this series does that but this song is just -- great.

Anything by Yoko Kanno that falls under this, Cowboy Bebop, Escaflowne. The Big O also has a great soundtrack, lots of good piano songs.

Though I also love the music from (and the movie) Princess Mononoke, very beautiful and powerful.

Baran Doban, because I think Super Robot Wars counts as anime, dangit. :P

Pretty much everything from the Super Robot Wars Alpha 3 soundtrack, particularly Ace Attacker and Ai Yo Far Away.

And nonvocal would be the Sad Tuxedo Mask Theme (or whatever it's called).

Probably not straight up Japanese anime, but then it counts for me.

Oh god I wanted to post that... I don't know why but the first time I saw/heard that song On BeBop I actually teared up. It is EXTREMELY Bittersweet, especially if you listen to the lyrics of the full song in the Album...
