Hmm...

Vocal-wise, it's pretty much the usual listing - FLCL (Advice, Sleepy Head, Runner's High, Ride On Shooting Star) Full Metal Alchemist (Ready Steady Go) and Cowboy Bebop (Live in Baghdad)

As for instrumentals only, Giant Ambition of Change (G Gundam) Go Go Cactus Man, Tank!, and Bad Dog No Biscuits (Cowboy Bebop) give me my fill, and for the sake of nostalga, I'll throw in the ol' Robotech theme.
This has been another blunder by you friendly local idiot.

Ugh, I just have so much stuff I think is great. Here's what comes to mind immediately (since they're on the MP3 CD I used to play in my car)

Vocal:
Venus to Chiisana Kami-sama (Venus and the Small Gods) - NieA_7
Origa - Rise - GitS:SAC 2nd Gig
Cyberbird - GitS:SAC 2nd Gig
What's It For - GitS:SAC
Be Human - GitS:SAC
Living Inside the Shell - GitS:SAC
Dragon Half - Ending Theme (it's just too silly not to love, especially when you have the translation!)
Mameshiba - Arjuna
Cloe - Arjuna
Poketto wo Kara Ni Shi (Empty the Pocket) - Escaflowne
Green Bird - Cowboy Bebop
Komm, Susser Tod (Come, Sweet Death) - The End of Evangelion
Karenai Hana - Full Metal Panic
Tomorrow - Full Metal Panic
Arekara - Full Metal Panic Fumoffu
Sore Ga, Ai Deshou - Full Metal Panic Fumoffu
Cradle of Amber - Groove Adventure Rave
A Thousand and One Nights - .hack//LIMINALITY
In The Land of Twilight, Under the Moon - .hack//SIGN
The World - .hack//SIGN
Free Bird - Haibane Renmei
Duvet - Serial Experiments Lain
Harmonia - Naruto (I know a lot of people loathe this song, but I love it)
Haruka Kanata - Asian Kung-Fu Generation - Naruto
Aka to Kuro (Red and Black) - Noir
Canta per Me - Noir
Salva Nos - Noir
Run! Run! Run! - One Piece
Kimi no Mado Kara - Sakura Diaries
Koi wa Kaze ni Notte - Sakura Diaries

Don't have nearly as many non-vocals, since they don't tend to stand out to me:
Nausicaa & Rekuiemu - Nausicaa of the Valley of Wind
Lain's Theme - Serial Experiments Lain
Torukia - GitS:SAC
Pet Food - GitS:SAC 2nd Gig

And the whole of the FLCL soundtrack, for both sides, of course.
