nTune is what I use for temperature logging. If you're not using an nForce motherboard, it probably won't work. Speedfan has a temperture log feature. And it logs more than just the GPU temp. It can also log the CPU, ambient, and HDD temps. It can be a bit tricky figuring out which is your GPU though. As an added bonus, if you have BIOS controlled fans, it can also control those fan speeds.
