Recommended games for PS2 Latecomer?

Katamari Damacy and We Love Katamari are both fun. And cheap.
Burnout 3 and/or Revenge. These are less Racing Games, and more like Fighting games with wheels. You can get 'em on Xbox, too.
And although you said you don't like console shooters, I would highly recommend the entire Ratchet & Clank series, at least up to Up Your Arsenal, which is just called Ratchet & Clank 3 in the UK, for obvious reasons. Deadlocked/Gladiator is fun, definitley, but it's more of a straight-up shooter than the others. The first game is like a Mario-style platformer made by a bunch of gun nuts. The rest of the games play up the gunplay more and more.
Also, R&C's brother series, Jak and Daxter. Just be prepared for a serious shift in tone from the second game on.
For fighting games, Def Jam: Fight for New York is deeper than most people would think.
And of course, there's Soul Calibur 3.

Let me just say you should be smote something fierce for merely 'considering' buying SotC.
I'll also back the Shadow Hearts games if you can find them.. they're great fun and have some of hte most wildly imaginitive characters around (what else can you call a giant, talking cat who moonlights as a mafia boss/actress and knows Drunken Fist?).
