How long does a human with access to Star Wars' medical facilities live? How long does he remain physically active/in his prime?
The only reliable information I seem to be able to find on this, from my fairly limited knowledge of the EU, is that Pellaeon was running about with a blaster well into his seventies. (He references, in one of the Thrawn Trillogy books, having served for five decades in the Imperial military.) I believe he goes on to live for several decades beyond that canonically, though I am unsure, having not read any EU material that includes him aside from the Thrawn trillogy.
If what I've gathered around here is accurate, Fett was doing much the same, except he was winning fist fights, running marathons, and soloing hordes of un-named characters in an entirely wankish manner well into his seventh decade. Then, of course, there's Palpatine, but he doesn't count, because he's a Sith.

In Truce at Bakura Orn Belden was something like 130 and "very old age" category, so that seems to give us an upper limit.

According to The New Essential Guide to Alien Species, 120 is the "standard" maximum, but there were Jedi who lived to be about 200.

Vima-Da-Boda comes to mind. Checking up on Wookieepedia, she's 190 as of the Battle of Yavin.
