For starting off I'll second the Hunter vote. Other good choices would be Shamans or Warriors. Pick whatever race suits you most, although it is important to know that the Undead and Night Elf starting areas tend to be rather deserted from what I have seen.
For trade skills pick up skinning and herbalism/mining, herbs if you are an Elf or Tauren. While they won't let you make any thing, you get good money which is the important thing at the start. If you want to get a manufacturing trade skill you can do it when you are 60 with a nice stockpile of money.
If you are interested in exploring there are some areas that are very, very rarely traveled from what I've encountered. Azshsara, Winterspring, and Swamp of Sorrows all have parts that are traveled once in a while, but otherwise are uninhabitated.
The Tauren have to have one of the nicest, greenest, lushest little starting areas with so many nice things to see and do, especially if you love Totem Poles and cool looking teepee thingies as much as I do. Plus, it's conveniently located. No matter what race you start out as on the Horde side, you can get there pretty easily via the Barrens. Just make sure you head there as soon as you spawn, so any gear you lose was crap anyway.
From there you can quickly head out and look for other places to level up, and you can dip across the border into the Elven territories if you dislike the Barrens (and with a name like that why would you?), and so on and so forth. But c'mon, be Horde! There's too many annoyin' Elveses already. The Tauren are the only real goodguys in the game anyway. ;D
