I use Lands To Conquer 1.21 with a few tweaks of my own. You can find a bunch on TWC.

The backstabbing and diplomatically unrealistically behaving AI frustrated me to no end, but then I downloaded the Ultimate AI Modification and Medieval II became a fantastic game all of a sudden. The mod does exactly what it promises in the features list. Everyone should use it.

I like to use those, as well as my standard practice of cutting the construction times for all structures in half. I personally don't think it's reasonable that it should take 6 years to build an archery range.
