Jedi outcast was awesome, and didn't have the retarded disabling of the increased saber damage cheat, but the non force using levels (Barring the liberal use of cheats to blast smugglers into flaming pits ) were dull and the map design fucking sucked.
KOTOR 1& 2 are fucking awesome and are probably the best SW games in quality (Well, the first) but lack the visceral thrill of the Saber games whilst KOTOR 2 despite the better plot has the whole "overlong beginning & NOT being Fucking finished" aspect that drags it down below My childhood memories of The original Rogue squadron.

As for my opinion? The KOTORs are awesome, and really up there, but....
They cannot compare to the sheer joy I felt the first time my lightsaber ignited in Jedi Outcast. Slashing through hordes FTW!
I never got why people disliked the FPS levels of Outcast. Sure, the lightsaber parts are far more fun, but the FPS levels let you blast away in a pretty fun fashion, not to mention the semi-large ground battle in the second level.
Besides, it gives a sense of CONTRAST - the room of stormies that could leave you gasping and praying for a health pack when you were armed with an E-11 is now mere fodder for your saber, which makes it a lot more fun.
The only bad level, as it were, of JO was that huge retarded jumping puzzle level you had to go through before getting your saber. Why'd Luke have to make me jump through all those hoops?

For fight simulations, TIE Fighter and X-Wing Alliance are a way to go. As for the RPG-style, KotOR is an excellent choice. Battlefront II and its 101st Journal -campaign is also dearly loved by many and for a good reason.

Just read the manual to Jedi Academy. Fucking lovely, the game doesn't support USB enabled mice. That's retarded beyond belief.

Yeah, because you know, their wasn't a HUGE BATTLE going on at the same time.
Fighers are utter shit and die in seconds vs Tartan Cruisers and the rebel equivalent.
The only fighter that can damage bigger ships are the Bombers, I.e Y-wings, B-Wings, Tie Bombers, Tie Defenders (two of which are expansion only if you don't mod). Frankly, if you are getting killed by fighters in that game you aren't playing it right.
The executor has shit long range and can lay siege to starbases across half the length of a map. Of course they are weak against bombers, they aren't designed to take those on. That's what escorts are for.
EAW becomes a very good game with the rights mods/combinations of mods. Vanilla EAW isn't great, but it is entertaining at least.

"Star Wars: Empire At War" and it's expansion "Forces of Corruption" are my current all time favorities. Although Jedi Knight Academy is right up there too.
My only complaint would be lack of playing multiplayer in these games. They both have it, but EAW has shit lag and JKA it's hard to fight fair players (instead you get hackers left and right, or players who apparently just play that game 24/7 and have nothing better to do than master every fucking move and tactic possible so you don't have a chance to win yourself unless you also live in you're parent's basement ).

Also speaking of Jedi Academy. I just got a mod called Sithworld that converts every npc into Lightsaber weilders and with appropriate force powers for their level of difficulty which is perfect as there can never be enough saber duels.

Ok, here's what I do when I'm bored...
I made two saved games of JO in the Na Shaddar Streets map. On both, I turned on the cheats, and killed everything in sight. Then, using the NPC Spawn and Notarget cheat, I seeded one map with stormtroopers, and the other with reborn bosses.
I walked into the small office in the cantina, turned off Notarget, and saved.
Now I have a couple of great games to play as a lone, super-powerful Jedi, with great high-fall areas, elevators, etc.
The best thing about it is to be perched very high above street level, and firing a homing RPG at a stormtrooper, and watch him try to outrun it!

Jedi Academy and KoTOR are easily my favourite Star Wars games. KoTOR has a great plot and fun gameplay, but the gameplay in Jedi Academy is just downright awesome. There are so many ways to just storm through the levels slaughtering everyone in sight with Lightsabers and Forcepowers... ooo, it gives me such a warm and fuzzy feeling.
One thing that pissed me off in Jedi Academy though was Force Push. Unless they were jumping, it was utterly useless against everything and only pushed it back about one-two feet. Force Lightning threw Stormtroopers for miles, and Force Push shoved them back slightly. That was a real fucking disappointment. I remember the original Jedi Knight, you could use Force Push to slam Stormtroopers into walls again and again until they died. You couldn't do that in Academy, and it made me sad.

Following the plot of Outcast carefully shows how wise Luke has become by then. He puts Kyle through the test on Yavin, and when Kyle completes it easily, he immediately knows Kyle has been back to the Valley. He tells Kyle to give him the Valley's coordinates (presumably because it's too dangerous for any single person to know its location).. but it's in fact because he knows someone might have followed Kyle there.
When Kyle meets Luke at the Cairn installation, he's surprised that Luke already went to the Valley and chased the Reborn troops away.
He's always one step ahead of everything!
Carefully following the dialogue through the story, the first time you play it, Luke's actions in the plot really give you a sense of his mastery.
To top it off, he does well watching your back in a lightsaber fight, too.

It's a hard choice between Rebellion and X-wing Alliance for the top spot. Great games, and while I know TIE fighter has a special place in a lot of peoples hearts, X-wing Alliance IMO was better.
After than KOTOR and the Jedi Knight games were wonderful.

Flight Sims: Tie Fighter, with a properly moded X-wing vs Tie Fighter coming in second (i.e Fly Tie Defenders and Missile Boats, or fly against them).
Nothing says teamwork then a group co-ordinated attack on a Executor Class...
3-d Shooter:
Force Powers - Jedi Academy. Love the Saber flexibility. And using the right cheat code, it's like you use all 5 player styles.

I'm Old School —which means for me, it's the old Atari Star Wars arcade video game. It's you in an X-Wing blasting your way through a screen of TIE fighters, then over the Death Star surface, then right down into the trench screaming full blast for the exhaust port. You've got shields but you've got to make sure you've got enough for the trench because of the forcefields. You played on until you got killed. Simple vector-geometry graphics and wonderfully cheesy but, damn, that was one of the best arcade games EVER.

I played through Rogue Squadron II and III on the Gamecube, as a housemate had them. They were mildly fun but very frustrating in places and pretty unrealistic. 'X-wing versus Tie Fighter' was great after I installed the Balance of Power expansion, it wasn't much of a game without that. Never had the time to play through the KotOR games - they're near the top of my 'games I should play through someday' list but it's a long list and I'm mostly very busy these days.
