So Im starting up a new D20 campaign locally, and I wanted to get some ideas. (feel free to move this to gaming if its more relevant)
Its about 5 years after Anakin Skywalker crashed into Coruscant with Palpatine. Grevious continued the civil war, and just did a frontal assualt on the Jedi Temple which resulted in his death, along with all the main players who had survived up to that point.
The party is leaning towards a darkside crime lord campaign, since the galaxy is in anarchy, and I am curious on where people think the game could go.

Think about a Mad Max type scenario for the players, or a Balkanized galaxy with different interests trying for control of their sector. Shadowrun might be a good idea for jobs, and the dark side is appropriate there.
Of course, the players will have the fun of once establishnig themselves as Crime Lords of a certain area, they will have buttkissers and backstabbers surrounding them. Lots of good times for paranoia in your players.
So their initial missions could be to help out a certain underworld mobster take control of a city, killing his rivals. Word gets around, and his rivals might try to muscle in, and the characters have to kill their enforcers. They encourage both sides to be polite, showing what could happen if things are not polite.
Have it where the missions they do in the beginning, sabotaging competitors, grabbing secrets, kidnapping people, start to be applied against them. Their favorite weapon misfires, setting off a small explosion. Their private data is hacked and either deleted, or the money is transferred to a portable credit stick. Their favorite prostitute is kidnapped, etc.
Let them have the fun of underworld, then let them have the revenge of the underworld.

Oh, my bad. Not PCs - all the Main NPCs. Windu, Yoda, et al. It was a clean sweep of the Republic.
And, yes, I think it would be Infinites I like the SW universe, but I dont like being held to the movies.

If you want to go full blown Infinities, here are some of my suggestions for the campaign:
The Empire rules the entire galaxy.
The crime syndicates don't like this so, we have a full rebellion against the empire by the Independent Alliance (instead of the Rebel Alliance) manned by the Hutt cartels, Black Sun (though naturally some in the Black Sun are secretly allied with the Empire), the bounty hunter guilds (Benelex, etc.) and some of the smaller crime gangs. The Dark Side Crimelord can be one of the Alliance's leaders.
Which means the big guns slugging it out for power has nothing altruistic like freedom in mind. Which means none of them fight with any regard for collateral damage. The war isn't a hit-and-fade campaign like the Rebel Alliance's war, but a full all-out war with a Delta Base Zero every other weekend.
PCs could try a Firefly-type campaign trying to send cargo here and there to meet a quota to live (buy food, fuel, equipment and such)... however, the Empire doesn't like them running cargo for the Independent Alliance and vice versa, so if they opt to run for one party, they should try to keep the other party from knowing.
The Corellian Merchants Guild should is outlawed to prevent unauthorised cargo being delivered during wartime. So no help from them for the PCs when they need sanctuary at Corellia or any Corellian territory in the galaxy.
Apart from that there should be a bunch of normal people out to save the galaxy from both sides of the war. They wear robes like Jedi, some possess lightsabers, but none of them a Force sensitives. Perhaps you can call them something like "The Revivalist Knights". They adhere to the Jedi code without being Jedi, thus they get shot much much easier the extinct Jedi Knights. They're also looking out for tools that can help them identify potential Jedi... although the job is more difficult than they can imagine.
Drop the PCs into that soup, and see how they swim in it.
