Oxford English Dictionary says:
"In early use: (cherubin, -yn, -ym). A reproduction of the Latin form, app. treated as singular or collective, without article, and variously understood."

Depends, like almost everything in the Imperium, it depends. Even the dumbest, ie mono-task, ones are decently smart by our robotics standards. They are used as automated forklifts, for routine maintenance on space craft, cleaning, etc. Combat servitors can distinguish between friend and foe, pick targets, and otherwise be half-way competent soldiers. The smartest ones are basically humans with maybe slightly below average intelligence who incapable of disobeying orders.
