After examining frames 2 and 3 of DarkStar's Death Star rebuttal to critics on his site (link at the bottom of the Death Star page), I noticed something I haven't seen anyone mention and isn't on MoO's page.
RSA says the existence of clouds on frame 3 is proof that Alderaan didn't have a planetary shield, which sounds nice, until you look at frame 2 again, which shows that those 'clouds' are in fact extremely dark sections of the planet.
If the DET Ray of Doom hit the planetary shield and spidered out, overloading sections of it faster then others, it would explain the mysterious untouched areas.

I know at least several example of decent accuracy of SW sensors. Consider how quick Obi-Wan figured out that Anakin wasn't on Naboo but on Tatoonie (AotC). And don't forget the Trade Federation were able to track the Jedi escaping through the vents on their ship before they boarded the landing crafts (TPM). That's all I can think of right now.
Just like anyone else's (including the Federation's), Imperial sensor will only detect something if they are looking for it and they are looking in the right place. When they're actually looking for something, Imperial sensors routinely perform as well as Federation sensors.
