My vote goes for Timothy Zahn, but perhaps I am a bit biased because it was his original Thrawn trilogy that got me back into Star Wars awhile back. Other very notable mentions for me would be Aaron Allston and Steve Perry.

Zhan, I could hear the Star Wars soundtrack while reading TTT, everything else after that started being off-key, until the soundtrack was completely tone deaf with the NJO. The EU has been dead to me for a long time now.
