The "Wings Over X" series I really enjoy because the flight model is simple enough that you can just play it as a slightly "arcade-y" game, which makes it the perfect thing for when you can't be fucked worrying about all the stuff that a real pilot would have to.

Actually, the FM for Wings over X is accurate enough; don't try sharp banking turns in a delta winged aircraft; you'll bleed speed fast and be in danger of a stall.

The F-105 flies like it should, it's a lead sled, but can outrun almost anything.
