My vote is for both dead in a showdown. They're too good at what they do to miss, but I believe my response can be summed up below:

Pretty much. In addition, correct me if I'm wrong, but gun kata doesn't actually make your reaction times faster, right? As much as I think Preston is a bigger badass, he loses.
His whole style revolves around knowing how bullets act and how people react and shoot in gunfights. Bending bullets and such completely throws that off, and while Preston might with some effort and training adapt to that, he won't get the chance after the first gunfight, especially if he doesn't know about the trick.

This is a no win for Wesley or Preston. One of three things is going to happen
1. Preston/Wesley shoot, Preston's excellent aim ensures Wesley dies, while Wesley's abilities ensure his first bullet is likely crippling if not fatal.
They both die
2. They both shoot, Wesley lives, Preston dies
3. They both shoot, Preston lives, Wesley dies.
They are in the open, keep in mind that Preston has no cover to work with, but Wesley has no stress on him and Preston's not going to cause any, Preston after all becomes rather emotionless once he's going to kill someone. Chances are the fight begin and ends with the first exchange of bullets, the only question is if Wesley is fooled by Preston's non-standard movements to make that first bullet simply a hit rather than a fatal hit.
Keep in mind what we know about Preston's abilites, he fights without emotion or close to it. His Gun Kata stands him in good stead in two things, one he's trained long and hard to fire from odd angles and his training makes center-mass and headshots harder to pull off(Not impossible or hard, just harder, he's well trained not fucking Neo)
Question can Welsey curve multiple bullets at a time? Preston often puts two or three bullets in a target to ensure a kill. If Preston hits Welsey two or three times, even if that one curved bullet hits him square the heart he's likely to die "second" if he shoots four or five times to Wesley's one and thus "win"

Note:This gun-fight will not last beyond the first exchange of gunshots. Neither of them can seriously stop the amount of bullets the other puts out. Yes Wesley can shoot a bullet down, but in a one on one fight in the open both of them are going to be firing until the other one goes down.
This will not be a clean fight, this will be two excellent marksmen blazing away at close range.

I've only seen the trailer for Wanted, but I don't remember the standard sidearms in that being capable of any above normal rates of fire. If this is true in the actual movie then this would either go to Preston or MAD. Even if Wesley can deflect bullets with other bullets his weapons simply won't be able to keep up with what a standard Grammaton Cleric pistol puts out.
