Yup, it's Nimitz. I noticed a big-ass 68 painted on the superstructure, and Google Search: CVN 68 quickly confirms that.

You're correct. The "68" on the island is the ship's hull number. CVN-68 is the Nimitz.

That's part of the initial trial runs, required before a ship is commissioned, I can bet that is the zig-zag maneuver. It's a pretty impressive pic...

Apparently such a maneuver can spoof wake-homing torpedos, though it's effects to the crew on top and aircraft might not be so good.

You know, it looks awfully smaller than it actually is from that angle. Is a part of it bent away from view or something, since the carrier's made up of interlocking hull sections?

I don't think so, but it looks narrow to me because at that angle, you can't tell the flight deck is angled. I think it's just the angle of the picture combined with the roll of the ship.

It's only an optical ilusion, caused by the angle on the angled flight deck and the horizontal, which happens to be almost paralel to the camera.
If any carrier would have to perform that kind of maneuvre in it's lifetime, I would personally commend the sub commander, or pilot, for performing such a wonderfull attack, and kick the admiral in charge for fucking up a zillion dollars carrier!

That maneuver is only done in the test runs, to establish maneuvrability parameters necessary for several ship's certificates of sea-worthiness, and to atest propulsion and helm machinery.
It's done for all commercial and naval vessels, and consists of several tests, including the zig-zag maneuver (also called "S" maneuver), the helm-over, circle, spiral, and a couple more.
