Medium rare for me. I will also eat very lean beef raw when it's ground for a sandwich spread--steak tartare, I think it's called in English.

Has anyone ever shown you the little firmness test for cooking your steak? You hold a hand up, palm up. Now touch the thumb tip to the tip of any of your four fingers and feel the prominent pad of muscle at the base of your thumb. With your thumb touching the tip of your little finger, the firmness you feel at the base of your thumb is about how a well-done steak should feel under an experimental poke of a fork while you're cooking. Touch the ring finger and that's a medium steak, the middle finger gives you the feel of a medium-rare, and touching the index finger translates into rare. A French-Canadian guy at work showed me this trick and I find that it really works!

Yeah usually how I sear cook the baby...nice and crispy on the outside...juicy on the inside(though it causes a great deal of smoke)
