If Star Trek books were canon, would they even out the fight
If the books were canon, would there be anything in them that could possibly help the Treksters increase their chances against the Empire?
I've not read any of the books, so I don't know, and this post is really just designed to keep from rehashing old arguements, but it is a valid question.

Well, if you pick and choose, it would help. Some species would be boosted enough that they can take on any SW government in 1v1 combat. The Federation would give any of the SW nations a bigger bloody nose (maybe even a broken one). Things like massive torpedo volley's, warp combat, and artifical wormholes used to crash planets into other planets.

Depends on the book. 'Intellivorve' has three Federation ships carving deep chunks out of a planet with phasers alone. They later destroy the same planet with an anti-matter bomb, produced from the reserves of one of the ships. In 'The Romulan Prize', the Enterprise and a single prototype Warbird are said to be enough to reduce a planet to slag, though no time scale is given (and admittedly, the 'planet' is a hollow ark of some kind).
But of course, it's not canon.

I've only read a few of the books. Some of them would help ST a great deal, primarily in the strategic sense, but others would actually seem to harm ST's tactical capabilities. While the strategic weapons used in the books are fairly impressive, the abilities of many of the starships are severely hampered. I would say it depends on the books used.

As mentioned several times already, it would greatly depend on which books one used. Generally speaking, however, the books would increase the United Federation's strategic strength, but not so substantially as to radically alter the playing field, so to speak.
Of course, if the books and suchlike were canonical (aside from The Motion Picture), it would provide a wealth of interesting information, -- details such as the fact that Captain Scott's family has a tradition of a child taking the surname of his or her parent of the same gender (as mentioned in the novelisation of The Search for Spock, that there are a number of distinct races of Klingons within the Empire, each with a different language and culture (and that the Klingons feel the United Federation suppresses diversity!).
The novelisation of The Undiscovered Country includes a scene in which the head of a munitions corporation speaks with the United Federation President, and the novelisation mentions elsewhere that the subspace listening post detected the Enterprise-A because it was attempting to cross the border with its cloaking device active.
Of course, other interesting details would be the rather adverse effects of initiating warp drive in an atmosphere (Prime Directive), and a rather clearer idea of what, exactly, the Eugenics Wars were (The Eugenics Wars: The Rise and Fall of Khan Noonien Singh).
