There are a lot of apps out there for a lot of different purposes. It may help if you gave us some sort of indication of what you're looking for.

For my part, I'd say pick up the Tiger GBA emulator. Can be obtained here: http://apps.tigerplay.info/. With that installed, all you have to do is download the rom for any GBA game, and you can play it on your phone. Solved all my mobile gaming problems.

If you hang out near WiFi or have unlimited data, Pandora is probably good to have for music purposes.

AirDroid lets you control your phone from your computer over WiFi and easily transfer files. Can be useful so you're not always screwing with cables.

FBreader is good for reading books. Aldiko is also good.

I have JoeVLC, which is a port of VLC, for playing any form of audiovisual file I might possess.

Kingston Office lets you open and edit most document files for free.

Dolphin Browser has a lot more features than the standard Browser.

Not too fussed on games, never owned a console and not really PC gamed for about a decade.

Utilities are good, list makers are good, mind mapping, dyslexia stuff, decent calculator / mini programmable spreadsheets for engineering problems.
dictaphones, idea generators, dictionary, thesaurus, laser cutter if possible :)

Wolfram Alpha is very nice but needs a connection. MathStudio is a surprisingly good CAS for Android, not Matlab or Mathematica, but workable.
