Crystal Gems VS Palpatine & Vader with guards
Darth Vader is in Palpatine's DSII observatory discussing the apprehension and conversion of Luke Skywalker when the Crystal Gems from Steven Universe bust in through the lift door: Garnet, Pearl, Amethyst, Peridot, Steven and Lion. They have come to destroy the Emperor and the Death Star and know exactly what he and his apprentice are capable of, but weren't aware of the presence of the Imperial guard in the observatory. Who wins?

Wait seriously?
Ok first off... Context of what Gems are helps
Second off... For the most part, all of the gems weapons are Melee based. Flail, Spear, Gloves.
Considering the propensity for Gems and their weapons to go "poof" I am not sure any of the preceding three could stand up to a Light saber. We see the gem Weapons take a lot of PHYSICAL abuse in the show, but against an 'energy' weapon like a Light Sabre, outcome is less known.
For the others listed...
Peridot has VERY limited telekinesis and Steven, well. Steven's typical "power" is usually talking to someone till they give into the "Power of friendship" which, I am pretty sure won't work against Vader.
Lion? He can roar...and make teleportation portals. And has access to a built in pocket dimension.
Taking on just Vader will be a difficult task.
The Emperor might actually be an easier target for them to neutralize. But of course, they have to "neutralize" them.
Killing is something the gems have almost never done, and tend to find very difficult to consider.
Really the BEST bet is to catch Vader and Palps off guard by Forming Alexandrite. Picking the two of them up, Cocking heads and knocking them out.

The gems' bodies and weapons are actually made out of hardlight, which arguably makes them totally immune to lightsabers, or at the very least no more vulnerable to them than to solid objects. They'd probably be more vulnerable to the melee weapons of the guards and Force Lightning.
Lion's roaring also appears to project some kind of sonic weapon, and he's obviously also capable of melee combat, while Steven's shield has been shown capable of slicing rock with the edge and he himself is becoming more proficient in combat over time.

Ok, on "Light Saber vs Gems"
Some one needs to pull up heat calculations for a Saber.
I am reminded that Gems routinely will routinely walk into Lava (which is typical 700 to 1200c)
Even with heat inconsideration. not sure about resilience to sheer cutting force.

What "cutting force" do you think lightsabers have? They're more or less cylindrical in their shape with perhaps a rounded semisphere tip. They aren't shaped so as to "cut" anything in the mechanical sense, which is all that would matter when striking a hardlight target like a Gem.

Alexandrite is a rather sure-fire win
Without allowing further fusions, Garnet is definitely the main player here, her foresight helps counter force precog and she's the toughest and strongest.
Definitely not totally immune, energy attacks work on them. A lightsaber striking a hardlight entity probably hurts the same way that hitting an ent with a wooden staff hurts, or hitting a human being with an oversize deli sausage hurts, but it can't "cut" them.
