The Micro Universe Theory.
Take this as seriously as you like.
While I have read through the complex Star Wars calculations on stardestroyer.net, there are a couple point that still remain unresolved. They are as follows.
1) In the movies, people frequently refer to “light speed.” This is MUCH slower than any hyperdrive calcs that have been presented.
2) The Millennium falcon traveling inter-planetary systems without hyperdrive
3) The fact that there is no noticeable Doppler effect for the sound of the various fighters flying around in space.
4) The use of Mechs, which have been repeatedly proven to be inferior to other types of vehicles (ask MKSheppard why)
5) The Force, which defies science in every way.
After considering this phemomenon for some time, I have came up with a solution that explains all of the above. The Star Wars galaxy is only 1/50,000,000 “normal” size. Everything is shrunken down to match this. The 1/50,000,000 figure is derived from the hyperdrive calculations on http://stardestroyer.net/Empire/index.html which pegged hyperdeive at 50 million times light speed. Of course, since they were really moving at light speed, then everything must be 50 million times smaller! This solves the above problems.
1) People were traveling at light speed all the time. The distance just seems longer but everything is just really small.
2) Even with sub-light speed, at such low distances, interplanetaty travel becomes cumbersome, but not impossible.
3) The fighters would be flying at much lower than the speed of sound, so no Doppler effect will be observed.
4) The square-cube ratio, the main reason mechs are impractical, would not be an issue at small distances.
5) At the extremely small (quantum) level, things impossible in comventional physics (conservation of matter, energy, momentum etc. might not apply)
Some people may object to this statement, citing the various SI units that were used throughout Star Wars. The truth of the matter is, all those units are essentially arbitrary units named by us, and can be changed to be whatever the writer desires. However, the speed of light is the only non-arbitrary unit of measurement that can NOT be changed. Hence, it is the only thing that we have to base our measurements on.

Your theory of light not travelling as fast in a 1/50,000,000 size galaxy does not apply. Read Einsteins Theory of Special Relativity. The speed of light in vacuu is regardless of size and speed of other objects. ie, if you are travelling at 0.5c, light still approaches you at 1c regardless of direction.
So regardless of the Millenium Falcon's size, if it can travel 50 million times the speed of light, it can travel that quickly as the speed of light is not a property of the size of the galaxy.
And so long as a "year" in the SW universe is comparable to ours, the size of their galaxy may be known (something like 1.2 times ours based on light years).
