Do Star Wars astronomers know details about other galaxies?
Any evidence to suggest they have info on them like we do here on Earth?

Somewhat. The 'satelite galaxies', they've actually explored to a degree.
The Trade Federation apparently made an attempt to reach another galaxy, but only reached the halfway point before fuel/cost became an issue.
As for evidence...... only by inference. However, they bypassed telescopes thousands of years ago. While they probably couldn't just jump to a next galaxy and begin jumping around, they probably have a good idea about star population and general location.
That's also not discounting the possibility of low-fuel requirement probes that might have been sent out over the centuries.
