I recently made a connection while rereading Shadows of the Empire.
The one Wdge brought down (seen in movie)
The one Luke sabotaged. (seen in movie)
Veers' walker, which was rammed by Hobbie. (novelization)
Another one brought down by Dash Rendar. (SOTE)
How many AT-ATs were left?

Even if it was the second, that could mean he shot up an AT-ST.

You seem to think I'm talking about the game. I'm talknig about the NOVEL Shadows of the Empire, which is part of the timeline. In it, Luke says: "I remember you. You know what's really weird? I used to remember seeing that scene in TESB. For some weird reason, I clearly remember Veers' AT-AT's head being rammed into with a snowspeeder, but I've never heard of that happening in the novelization until now. Maybe it's some weird sort of deja vu (sp?). I dunno...it's been bothering me for a while before that, because I've always remembered seeing that and on the tape I've never saw it again. The T-47s caused almost no affect on the Imperial assault; based on the fact they're unreliable and fragile civilian speeders with guns tacked on that did virtually no damage--destroying and AT-ST would be notable. Knocking out AT-ATs was considered all but impossible by the Rebels in T-47s. He'd be "REALLY FUCKIN GOOD" not "pretty good" if he took down a AT-AT.

It could mean anything. What if Rendar dodged all of the AT-ST's fire and downed it on one pass or some stuff like that? Luke's dialogue isn't specific enough to jump to the conclusion that it was an AT-AT he downed. In addition, I don't recall seeing any other AT-ATs with Veers by the time he destroyed the shield generator. Does that mean all the other AT-ATs were destroyed or am I remembering things wrong?

I dunno...they seem pretty weak to me...it was destroyed in seconds from Chewie's AT-ST in RotJ. I think T-47 laser cannon fire would easily penetrate its armor, NTM completely knock it out of commission if a leg got damaged. I don't think AT-STs are too hard to down, unless there are swarms of them and are protecting each other's blind spots. The pilot who rammed into Blizzard-1 was Zev Senesca. (In the novelization)
Dash Rendar was piloting the T-47 which shot the crippled walker just above it's neck after it was brought down by Wedge and Janson.
As I remember there was at least five AT-AT's and probably more than just one AT-ST.

It is generally agreed that just two X-Wings could have defeated the AT-AT force. It is also generally agreed that the Rebellion couldn't spare that many. They were prepping the X-Wings as quickly as they could to escort the transports. It eventualy got to the point where they could only send one fighter per transport. The X-Wings were there mostly to kee the Ties off the transports since the ISDs were mostly neutralized by the ion cannon.
