Know what food I miss the most from Australia? Crumpets....mmmmmmmmm. Lightly toasted, mosty just enough to get them warm, and then put enough butter on them that you fill up most of the little holes, and then drizzle honey on them........MMMMMMMMM. Heavenly.

Have you tried them with Vegimite, heaven! Or heat them up, a layer of butter and then a thin slice of cheese (which practically melts into the little holes if sliced thinly enough. Add a sprinkle of Black pepper to the layer of butter before the cheese (if using Red Leicester or similar dark cheese) for an extra taste sensation. Serve with tea in cold countries and OJ/chilled beer in hot countries.Zaia wrote:Know what food I miss the most from Australia? Crumpets....mmmmmmmmm. One is in VA, on Route 7. For me it's not too far, for you...I'm not really too sure. In Skyline shopping center(The Giant there has huge selection of gorumet goods). Usually carries them alongside Muffins and such not.
The other is the commissary(varies, but of less frequency then the Giant), which I use my dad's ID.

I actually came up with this last summer when I wanted an alternative to grilled chicken with BBQ sauce.
Grilled Lemon Chicken
(1-2) Packages Chicken Breasts
(1-2) Lemons
Olive Oil
Thyme (fresh, if possible)
1 Charcoal gril
1. Open the packages and wash the surfaces of the meat under running water. Dry with paper towels. This is just a good idea in general for any meat, as it can help remove some of the bacterias sitting on the surface.
Place them in a large bowl/pan.
2. Squeeze the lemmon (or lemons, depending on the amount of chicken and how strong a taste you want) into a bowl and mix with enough olive oil to coat the chicken.
3. Pour the mixture over the chicken, using your hands to coat the meat with it. Season the chicken with the thyme (both fresh and dried thyme will work just fine)
4. Let it marinade for between one to two hours.
5. Put the pieces on a heated grill with a tongs. Do becareful, as the gril may flare up. As well, place a few sprigs of fresh thyme on the grill. Periodically, baste the chicken with the leftover juices from the bowl, and occasionally adding some olive oil. This will help give it a good color and taste.
6. Use your mad-masculine grilling skills. When the chicken is cooked through (you can tell which pieces are done by pressing down on it with the tongs. If they are firm, they are most likely done. It's not a bad idea to check a piece, though,) take them off and serve.
I haven't made this recipie since last summer, so when I do it again, I'll make sure that I gave the right ammounts.

Another recipe:
Take some steak and cut it into small strips, maybe a third of an inch thick by two or three inches long and and an inch or so wide and fry them
When they're cooked, put them to the side of the pan a little and let the grease collect on the other. Mix a little flour into the grease so it becomes a paste
Pour a jar of whole mushrooms into it, liquid and all, and cook till the mushrooms are nice and soft
When you serve it, put the steak and mushrooms in a little pile on your plate and pour some of the sauce over it
That is delicious. Good with mashed potatoes and salad.

Chicken Parm
Ok, so this is the quick & easy way to do this. Go to the grocery store, get the pre-packaged breaded chicked fillets (they come in packs of 8 or 10, I think), some mozzerella cheese, a jar of your favourite red sauce (I use any thick one that has a gazillion 'schrooms in it and then add my own spices, etc.), and a box of your favourite pasta (I personally like Barilla's "Campanella" the best). Cook the pasta to al dente (firm but cooked), drain it, mix in a little bit of red sauce (enough to color the pasta) and then dump the pasta in the bottom of a large pan. Place the chicken fillets on top, drizzle red sauce on top of each piece of chicken, and then place slices of cheese on top of that. Stick into a preheated oven (350 degrees, I think?) for about 10 minutes (until the chicken is heated--remember, with the prepackaged cutlets, they're already cooked--and the cheese is melted nicely.
Really easy and really yummy. Mmmmmm.
Now let me find something for dessert....

Chicken in 40 cloves:
1 whole chicken, cut into eight pieces
40 cloves of garlic, peeled but uncrushed (as a general rule, each head of garlic yields approximately 10 cloves)
1/2 cup + 2 tablespoons of olive oil
10 sprigs fresh thyme
Seasonings to taste (salt and pepper alone are just lovely with this dish, though)
1 loaf French or Italian bread, cut into inch-thick slices
Preheat oven to 350 degrees F
Put chicken, seasonings and 2 tbsp. olive oil in a bowl and toss to coat. Brown the chicken in a fry pan or skillet and transfer to a lidded pot (like a Dutch oven). Add the 1/2 cup of olive oil, 10 sprigs of thyme and 40 cloves. Cover and bake for 1 1/2 hours.
Remove chicken from oven, rest for 5-10 minutes. While chicken is resting, turn on the broiler. Take the bread slices, brush them with the garlic oil (getting bits of the now very softened cloves into the bread is preferable) and put them on a cookie sheet. Broil garlic bread for 3 minutes or until top of bread is toasty. Serve chicken with bread.

For dessert...Cheesecake with Strawberries is a quickie(though it depends if I bake the evil thing)
Basically thaw Cheesecake(if I don't bake it, I buy Philly Cheesecake, very thick...better then most in my opinon)
-buy fresh strawberries(sometimes I mush them, mix with a tad bit of sugar and make it into a sauce).
-melt semi-sweet or dark chocolate, about half a bar.
- Add 1/2 tps of butter
Pour sauce on top of cheesecake and either full strawberries or starwberry mush sauce.
Course...this also works for chocolate dipped starwberries.

Another great recipe from Alton Brown that I've used myself.
Good Eats Pot Roast (from "A Chuck for Chuck")
1 (2-pound) blade cut chuck roast
2 teaspoons kosher salt
2 teaspoons cumin
Vegetable oil
1 medium onion, chopped
5 to 6 cloves garlic, smashed
1 cup tomato juice
1/3 cup balsamic vinegar
1 cup cocktail olives, drained and broken
1/2 cup dark raisins
Preheat the oven to 190-200 degrees F. Place a wide, heavy skillet or fry pan over high heat for 2 minutes. Meanwhile, rub both sides of meat with the salt and cumin. When the pan is hot (really hot) brown meat on both sides and remove from pan. Add just enough vegetable oil to cover the bottom of the pan then add the onion and garlic. Stir constantly until onion is softened. Add the tomato juice, vinegar, olives, and raisins. Bring to a boil and reduce the liquid by half. Create a pouch with wide, heavy duty aluminum foil. Place half the reduced liquid/chunk mixture on the foil, add the roast, and then top with the remaining mixture. Close the pouch, and wrap tightly in another complete layer of foil. Cook for 3 to 3 1/2 hours or until a fork pushes easily into the meat. Remove from oven and rest (still wrapped) for at least 1/2 hour. Snip off 1 corner of the foil pouch and drain the liquid into a bowl or measuring cup. Add some of the "chunkies" and puree with an immersion blender. Slice meat thinly, or pull apart with a fork. Serve with sauce.
