For those like myself that don't like to use cream when cooking and don't mind being a tad adventurous, find a mild cheddar, or similar light cheese and grate up a small amount (say about 5-10gms), simmer up the cream (if your using clotted, then a dash of olive oil and only the smallest burst of heat to help melt the cheese), and add the cheese, place a bit of white or black pepper according to taste and mix it up. use this mixture instead of the straight cream and it will be a total transformation.

Why not use cream? Cream is good! White, sticky stuff, just slightly salty... mmm.

I just don't like the taste or the consistency either on it's own or in cooking.

I learnt to cook in the Army, so my experiences have exactly the same base, after a while though you find stuff you like to eat, if only to treat yourself.

You'll note all my recipes are very rough in the proportions and heavy on the (find what you like tastewise) as that's how I learnt to cook. And people would be surprised at the range of things you can cook in the wilds from base ingredients and stocks.

All right. As the stereotypes have it, us guys can't cook for beans*. But I've found reality isn't always that clear-cut. Indeed, there are males out there who continually fail to accidentally burn water.

So, in order to bolster our team's points in the neverending struggle between genders, gentlemen, your tastiest recipies... let's have 'em.

put butter in a pan
scramble 4 eggs
get out 4 slices of cheese
stack the eggs on cheese on bread, double layered
add salt and pepper, microwave for a minute

Pastitsio (Greek casserole)

(Warning: This recipe is off the top of my head, I've made it that much. It is good. But I'll have to check the exact quantities...)

Preheat oven to 350 degrees Fahrenheit.

Brown (with olive oil) in a large skillet:
1 onion, diced
2 cloves of garlic, crushed

Add:
1 lb ground meat (seriously, anything works)

Cook until mostly done. Meanwhile, mix together in a bowl:
1 8-oz can plain tomato sauce
1/4 cup dry white wine or sherry
1/2 teaspoon dried oregano
1/2 teaspoon cinnamon powder
1/2 teaspoon salt
Add to meat mixture and cook for another 5 minutes or so.

Then add:
1 large egg, beaten

Mix everything together, take off burner, and set aside for the moment.

While you're doing the meat, you should also do the following.

Cook until al dente:
1 lb elbow macaroni, penne, or pennette pasta

Drain and combine with:
1 large egg, beaten
1/2 cup parmesan cheese
1/4 cup milk

In a medium saucepan, melt:
1/4 cup butter (half a stick)

Add:
1 tablespoon flour
1/4 teaspoon black pepper

Stir quickly. When combined, add:
1 cup whole milk
1 cup parmesan cheese

Add:
2 eggs, beaten

Heat, stirring, until thickened and combined.


Now for the assembly...

Have a 13x9x2 baking dish ready. Place meat mixture in bottom of dish, and spread out. Layer pasta mixture on top of meat. Finally, pour cream sauce over entire mixture. Bake for 35 minutes, cool slightly and serve.

Interesting, I do something similar when I make Macaroni Cheese (but minus the meat obviously, in that dish). Do you bake the dish for a few minutes to crisp over the cheese?

Not really. The cream sauce kind of melts and browns in the oven. Baking it is more to set the sauce than anything else. Otherwise the sauce would be all over the place... and besides, it wouldn't taste good at all that way.

yeah, just noticed it's parmesan cheese, not a good thing to overcook or make too crispy. Try it for Macaroni cheese though, make sure you have some grated cheese left over so you can sprinkle it on the sauce before you put it in the oven, yummy and scrummy.

I've cooked dinner for my mother on many occasions. Matter of fact, I've made more meals this semester than I have the last year. And I've yet to frell one up.

My mom learned the hard way that just because gay guys are *supposed* to be able to cook, does not mean this one can... And I demonstrated it all too well with a house full of natural gas at about 2AM the other day, with a stove covered with the burned remains of what was supposed to be a type of Mexican drink... And that is not the only time I've done such things, I am a disaster in the kitchen unless it involves a can, a can opener, and a nuker. If what is being made requires anything more than that, call the fire department.
