Veers' walker, which was rammed by Hobbie. (novelization)
You know what's really weird? I used to remember seeing that scene in TESB. For some weird reason, I clearly remember Veers' AT-AT's head being rammed into with a snowspeeder, but I've never heard of that happening in the novelization until now. Maybe it's some weird sort of deja vu (sp?). I dunno...it's been bothering me for a while before that, because I've always remembered seeing that and on the tape I've never saw it again. I think I remember seeing it on another tape that my dad recorded off of TV...the damndest thing, eh?
There was this scene where a snowspeeder flies over the head of a Walker, firing its lasers. Maybe that's what you remember?

Veers DID lose his walker. That's how he lost his legs.
If he did its a mystery as to how. The battle was over, the last speeder was seen to be shot down making a run on Veers walker, and Hobbies speeder cannot have crashed into Veers walker as described by the novelisation.

Nope. I remember the Rebel pilot and Veers screaming as they made contact head-on.

Simple: someone else slammed into him.

You cannot say for certain that it was THE last speeder. Since Veers' walker DID go down, it obviously wasn't.
What I am saying is Veers walker cannot have been destroyed as described by the novel, it clearly contradicts the events of the film. Where (and how exactly) does it describe Veers losing his legs?
If it describes a different snowspeeder ramming the walker (i.e. other than Hobbies, which didn't as proven by the Film) then fair enough, a snowspeeder ramming a walker is enough to destroy it.
If it doesn't specifically refer to a different snowspeeder (i.e. implies hobbies speeder) hitting the walker than everything else is pure speculation, Veers may have lost his walker (and his legs) after destroying the generator, but we do not know how.

Here's what I know:
From the New Essential Guide to Characters:
During the Battle of Hoth, General Veers completely routed an entrenched enemy with minimal Imperial loss of life. One of the casualties, however, was nearly Veers himself, when a snowspeeder rammed into the head of Blizzard One, Veers' command AT-AT. The general managed to throw himself into the neck corridor just before impact, but seffered severe injuries to his legs. Unwilling to accept cybernetic replacements in a culture that frowned on cyborgs, Veers moved about in a repulsor carriage from that day on.
Hobbie's speeder rammed Veers' walker after he destroyed the generator.
Hobbie ejected and survived fine. Veers lost his legs.
