Actually NJO Luke and Mara don't look too bad at all.

That silly Light Side anti-aging or something.

I thought they kept themselves youthful by means of genotherapy and alternative medicine.

(Don't forget the fact that the plastic surgery of the SW universe probably is far more advanced than that of our world)

It's also possible that Mara Jade are one of those women who only get more graceful as they get older.

When your one of the major players in a the greatest trilogy every made it's hard to not be type cast.

Don't forget that several of the other actors in the SW trilogy already were typecast - most notably Peter Cushing, who strangely enough enjoyedbeing typecast as villains. Maybe he was the British equivalent of Jack Nicholson.
