My personal favorites are the TTT and Gladiator soundtracks.

Too many to pick. There are a lot where I would wear out one or two tracks because I love them to death, but I'll listen to just about the rest of it anyway.

But, so far as overall greatness, in that EVERY track is a winner, here're my picks, in no particular order:
  • The Rock - Hans Zimmer
    Enemy at the Gates - James Horner
    Band of Brothers - Michael Kamen
    X-Men - Michael Kamen
    The Patriot - John Williams
    The Empire Strikes Back: Special Edition - John Williams
    Pearl Harbor - Hans Zimmer
    Tears of the Sun - Hans Zimmer
    Broken Arrow - Hans Zimmer
    X-Men 2 - John Ottman
This is by no means complete; just what I could think of off the top of my head.

For Soundtracks as in songs with words, I'd have to go with 'Titan AE' believe it or not.

I really like that song in "Children of Dune", when they are doing the Godfather thing, and making all the hits.

Gladiator theme, just plain beautiful.

The Matrix theatrical theme, not the rock song, that's just plain awful.

Episode I's Duel of the Fates.

the matrix soundtrack, not reloaded, the new one just didnt have the same effect

Did you watch the documentary on the Pioneer DVD with the Geinoh Yamshiro Gumi? The part where they revealed that one of the instrumentshas to be 100 years old before it can be played properly was cool as hell.

Empire Strikes Back

Parts of Attack of the Clones soundtrack also are good

2001 a Space Oddysey, because of the actual composers (and some I think Lucciano Berio piece, as well as the Strauss') such high culture for a movie :)

Apollo 13... though I like the movie itself heaps by itself ;)

Lord of the Rings, Fellowship and 2 towers (Both have alot of the same material)

Prince of Egypt (the actual soundtrack, none of this stupid pop singer stuff)

Saving Private Ryan

sure there's others, just can't think of any....
