American, Irish, Candian, etc. describe different types of bacon. They mainly come from two different parts of the body of the pig. The stomach and the back. Depending what kind changes what it looks and tastes like and where you get it from.

I never heard of the Mexican Wave. I always heard it was the Wave and rather dumb.

OK so I found this site http://www.foodsubs.com/MeatcureBacon.html which straightened me out.

So in Canada, "bacon" is the typical "American bacon", and what's called "Canadian Bacon" is never called that, its always called Ham (at least I've never heard it called Canadian bacon).... American TV had me confused, I used to think American bacon was something else because of their constant referral to "Canadian Bacon".

As for the wave, I've never heard it called the "Mexican wave", maybe its an overseas thing?

Why would Mexicans label it a Mexican Wave. If you insist that it is Mexican in origin, and you insist on calling it by its full name, then it would still probably be called a wave.
